What Pairs Well With Brie?
The mild flavor of brie cheese lends it to lots of different food pairings. Traditional pairings for brie cheese include lots of fruit, but also some savory options. BOTH! Well, actually, brie should never be served chilled, but room temperature is warm enough to maximize the flavor. Serving warm brie, either baked in pastry, or on its own, is an especially creamy treat. Baking loosens up the cheese and turns it into a creamy fondue like texture, and makes it easier to scoop directly onto a baguette.
Warm and room temperature brie both pair with the same types of flavors that are listed above. A medium size wheel of brie will take about an hour to warm up to room temperature, so make sure you take it out of the fridge and give it enough time before you need to serve it.
Can I Keep Leftover Brie?
YES!! Brie can be kept much longer when it is a full wheel, but will only last up to about a week once it is cut. Once the rind is cut, and the cream is exposed, the key is to ensure it is stored in the fridge in a way that controls moisture loss and exposure to air. One way to do this is to wrap it in parchment paper and then put it in a small glass or plastic container.

YES!! But, only if you like the flavor and texture of it. The soft white mold that forms the rind of brie cheese plays a big part in developing the flavor of brie. It has a sharper flavor than the paste, but once you acquire the taste for it, it will become your favorite part.
