Summer Recipe Series - Feta & Watermelon Salad

I couldn’t let the Summer Recipe Series end without including this iconic salad. I have been dodging huge bins of watermelons at the supermarket for a while now, and finally decided it was time to get one, and make all my fave watermelon recipes – which is basically this salad! Needless to say, it will be on repeat all week since watermelons are so.... generous.

This cheesy salad can be served on a platter, or in a bowl, but whatever you do, don't mix it in advance of serving. Grab your biggest cleaver, your cheese knife, and a giant dish, and whip up this salad with me!

You Will Need

A large salad bowl

2 cups of watermelon in 1 inch cubes

1 cup of feta cheese in ½ inch cubes

¼ cup of sunflower seeds

¼ cup of pecan pieces

2 sprigs of roughly chopped mint

Optional: Balsamic reduction – I always have Nonna Pia’s in the fridge, but if you prefer to make your own, here is a simple recipe.

Optional: Grilled chicken breast

How to Make

  1. Season the chicken and cook thoroughly. Set aside to cool.
  2. Cut the watermelon and feta, and set aside until all the other ingredients are ready to go.
  3. In a medium salad bowl, mix all ingredients, then top with balsamic reduction and grilled chicken if you are adding those optional ingredients.
  4. Serve on a bed of mixed greens for a dinner salad, or straight up as a side dish.
