Summer Recipe Series - Feta & Watermelon Salad
I couldn’t let the Summer Recipe Series end without including this iconic salad. I have been dodging huge bins of watermelons at the supermarket for a while now, and finally decided it was time to get one, and make all my fave watermelon recipes – which is basically this salad! Needless to say, it will be on repeat all week since watermelons are so.... generous.
This cheesy salad can be served on a platter, or in a bowl, but whatever you do, don't mix it in advance of serving. Grab your biggest cleaver, your cheese knife, and a giant dish, and whip up this salad with me!
You Will Need
A large salad bowl
2 cups of watermelon in 1 inch cubes
1 cup of feta cheese in ½ inch cubes
¼ cup of sunflower seeds
¼ cup of pecan pieces
2 sprigs of roughly chopped mint
Optional: Balsamic reduction – I always have Nonna Pia’s in the fridge, but if you prefer to make your own, here is a simple recipe.
Optional: Grilled chicken breast
How to Make
- Season the chicken and cook thoroughly. Set aside to cool.
- Cut the watermelon and feta, and set aside until all the other ingredients are ready to go.
- In a medium salad bowl, mix all ingredients, then top with balsamic reduction and grilled chicken if you are adding those optional ingredients.
- Serve on a bed of mixed greens for a dinner salad, or straight up as a side dish.
