This is a bit of a twist on classic chicken Parmesan….. Actually, maybe it is an entirely different dish! Whatever it was, I enjoyed it, so decided to share it with you even though it only calls for a minimal amount of cheese.
I planned to put the Chimichurri on some chicken breasts with a mix of Mozzarella and Parmesan on top (which would’ve been a similar presentation to the regular chicken Parmesan). Read on for what really went down!
